The Frugal Canteen was a free food fiesta held in late 2025 in Melbourne. Chefs, cooks, students and even sound artists cooked, schleped, served and ate together. The event served over 2000 meals and the vibes were wild. As a part of this, Margolis created a generative ambient work based on the interaction between the Federation Bells and live improvised conversations and performances from attendees. He mixed and mingled them into a big old audio soup that some listers found an endless source of joy and wonder and some found a bit scary. The audio piece you are listening to is re-imagination of the event, which integrates the audioscapes of chefs chopping, slicing and gossiping with vox pops from the day of the event, and the eternal ringing of the bells. But this piece will never be fully cooked. More ingredients for this audio soup will be gathered each time it is played, so it become, like a great master stock, richer and more multilayered with age. Now THIS is cooking.
